The next Simpsons & Friends dinner will see chef Tom Barnes, executive chef of Simon Rogan's three Michelin-starred L'Enclume, one-star Rogan & Co & Henrock in The Lake District, take over the Simpsons kitchen on Tuesday 19th July.
As one of Britain's most talented and exciting young chefs, Tom will create the hyper-seasonal menu below, priced at £130 per person for canapés followed by six courses.
Tartlet of spiced Loch Duart salmon, roe marinaded in ponzu
Steamed dumpling glazed in rye miso, chicken offal and roasted yeast
Cured mackerel in horseradish, fermented gooseberries, preserved cucumber
Tartare of Scottish sea scallops, dulse seaweed, farm pea’s and elderflower
Custard of English mushrooms, prune, truffle and pickled hen of the woods
Steamed west coast cod, smoked eel, caramelised whey onions, buttermilk
Loin and belly of Herdwick lamb, glazed in a lamb mousse, creamed potato and ramson
Crozier blue cheese, pear cooked in beeswax, preserved figs, hazelnuts
Chamomile cake with compressed strawberries, floral herbs and Aynesome honey

Tom Barnes is known for his intuitive cooking style and appreciation for seasonal ingredients. His work as executive chef for Simon Rogan's L'Enclume, Rogan & Co, Henrock and Home by Simon Rogan has been instrumental to the group's success.
Tom has won The Roux Scholarship and wowed on BBC2's Great British Menu, where he won the main course at the final banquet. Tom has been announced to appear at various festivals this summer, including The Big Feastival and Wilderness, where he will cook one of the celebrated banquets.
